Malaysian Cuisine Curry Puffs (Karipap inti kentang) Recipe

Filling : 
Potatoes
2 tbsp Fish Curry Powder
1/4 tsp Chili Powder
Curry Leaves
1 big Onion paste and 2-3 cloves garlic paste
2 tsp Shrimp paste (can skip if u vegetarian)
Tamarind paste
Oil
Salt as your taste

First heat the oil in pan, then add curry leaves and followed by onion and garlic paste. Stir for 1 to 2 min. Then add shrimp paste (optional) and tamarind paste. Then followed by curry powder and chili powder. Stir for 1 minute then add potatoes. Add water with salt and let it boil till the water absorbed and the potatoes is cooked. Keep it a side awhile till cool and ready for filling in Kari pap dough.

Dough:
6 tbsp Oil
1 tbsp Butter or Ghee (heat with the rest of oil) then set it down to cool.
500g Plain Flour
2 tbsp Corn Flour
1 cup Cold Water solve with 1/2 tsp salt.

Mix all the flour then add the oil and mix well. Then following add water little by little at the time. Knead the dough till no flour left at sides of the bowl. Roll the dough to form oval shape. Cut into smaller pieces.Then make into small balls. Let it rest for 1/2 hour then flatten the dough to fill in the potato gravy. Then lastly fold into half to form a puffs shape. Deep fry the puffs in oil till turn to brown.
