Lotus Root Soup (vegetarian version soup)

Lotus root soup is a nutritious Chinese soup. The root is crispy (have the texture of a potato) and having a slightly sweet taste. Lotus root has a variety of proposed health advantages. I simply love this Soup. I have modified the soup in vegetarian versions.


Ingredients 

1 lotus roots (frozen or fresh)
60 grams of dried peanuts (soaked 3-4 hours/overnight)
1 Carrot
6 cups water (can be adjusted)
1/2 tsp Chinese sesame oil
white pepper powder
Salt to taste

*if possible add also red dates, this also has its own benefits use, as Chinese medicine. * (quantity: a handful)







Preparation of Lotus root:







Wash the outside thoroughly before peeling and slice off the ends on both sides of the root. Cut the roots cross-wise so that they look like the wheels and wash also the insides before slicing them for cooking.

Bring water to boil, add all the ingredients except sesame oil, salt and pepper.

Allow the ingredients in the water to boil, then simmer for about an hour. The longer the soup simmered, it will tasty and more flavored.

Lastly add the Sesame oil, 
Pepper and Salt to taste and stir well, after few minutes can turn off the flame.
