Basic Masala/ Sambar Powder:
This is basic Powder which can use not only for Sambar Gravy (Lentil Gravy), it can use for Kara/Puli Kolumbu (Spicy/ Tamarind Gravy) and some others Gravy too.
Masala Powder:
Dry red Chilllies - 2 cups /32 tablespoons/160 grams
Coriander seeds - 3 cups /48 tablespoons/240 grams
Turmeric powder- 1 cups/16 tablespoons/80 grams
Coriander:Chillies:Turmeric = 3:2:1
(if reduce one portion of item, others ingredient needed to reduce equally) e.g *1 cup Chillies+ 1 1/2 cups coriander +1/2 cup turmeric powder*
Method:
Dry roast Dry Chillies over the low flame about 20-30 second and keep aside.
In the same pan add Coriander seeds, dry roast over low flame till get nice aroma and slightly turn light brown (avoid burning).
Let them cool in room temperature and transfer to Mixer/ Grinder Jar. Add the Turmeric powder in and grind them until slight coarse texture.
This portion can serve about 2 cups. Keep it in airtight container.
