White Choc Cranberry Cookies Recipe

INGREDIENTS
2 cups all-purpose flour
1 cup old-fashioned rolled oats
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 1/2 sticks unsalted butter (10 ounces), at room temperature (1 stick butter is equal to 4 ounces, or 113 grams and 1 half stick (1/2 stick) butter Equals to 2 ounces (oz) or 56 grams.)
1 cup brown sugar
1/2 cup granulated sugar
1 large egg, at room temperature
1 large egg yolk, at room temperature
1 tbsp pure vanilla extract
1 1/2 cups white chocolate chips
1 1/2 cups dried cranberries

METHOD
Preheat the oven to 162 degrees C.In a separate bowl, mix the flour with the oats, baking powder, baking soda and salt. Firstly beat the butter and both sugars at medium speed until creamy. Add the egg followed by the egg yolk and vanilla,
Beat in the dry ingredients, then add the chocolate chips and cranberries and stir well.
Then lastly Drop by rounded teaspoons onto ungreased cookie sheets.Bake for 12 to 15 minutes in preheated oven, or until golden brown. Cool on wire racks.
