Coriander Rice/Cilantro Rice/Kothamalli Sadam Recipe




Cilantro/Coriander is well known as a herbs and spices, It is used in Asian and east European Culinary since ancient times. It has own nutrition facts.The herb is a good source of minerals,also rich in many vital vitamins and one of the richest herbal sources for vitamin K. So this Cilantro rice will spiced up your life.

Ingredients
Coriander leaves – 1 1/2 cup
Mint - 1/2 cup
Onion - 1 small- chopped
Ginger -  3 inches
Rice – two cups
Cumin powder – 1/2 tsp
Coriander powder – 1/4 tsp
Turmeric powder – 1/4 tsp
Green Chillies  – 2
Oil – 2 tbsp
Ghee - 1 tbsp
Cashew – two tbsp
Cumin seeds – 1/4 tsp
Urid Daal – 1/2 tsp
Mustard seeds – 1/4 tsp
Salt – to taste

Method
Wash rice and let it soak for 10 mins, Meanwhile grind coriander leaves, mint, cumin powder, coriander powder, onion, ginger and green chili together. Heat a Rice Cooker and add the ghee and oil together.mustard seeds, Cumin seeds, urad daal and cashew. Fry them until they are light brown. Add grind coriander mixture and turmeric powder. Fry until you see oil on the sides. Add 3 cups water and let it come to a boil. Now add the soaked rice, salt and mix well. Let the rice cook in the cooker itself. Now it can served with yogurt.

Another Method:-
Cook the Rice first, then add the cooked rice into the cooked mixture paste and mix it well.
