Aloo/Potato Fry Indian Spiced Curry/Masala Recipe


Recipe:

Potatoes - 10 small potatoes

Oil- 2 tbsp

Water- 1-2 cup (can be adjusted)

Extracted Tamarind water- 1/2 cup

Cumin powder- 1/2 tsp

Turmeric powder - 1/4 tsp

Chilli powder - 1 tbsp

Chilli sambal - 1/2 tsp (optional just to add the spiciness) / skip if does not take spicy food

Salt as per your taste


Tempering:

a few curry leaves

Mustard seed - 1/4 tsp

Chilli- 1

Medium Onion- 1

Garlic - 2-3 cloves

Asafoetida - a pinch


First heat the oil in pan, then add curry leaves and mustard, wait till the mustard pop and add now onion and garlic and chilli,Stir for 2 to 3 min (till it the onion turn slightly brown). Then add potatoes. Then followed by turmeric powder, Chili powder and cumin powder. Add water with salt and after 10 min add extracted Tamarind water and let it boil till the water absorbed and the potatoes is cooked.
